Easy Potsticker Soup

One of our favorite foods in this house is dumplings! I could eat dumplings and sushi every day without complaint, and I’m pretty sure AG is happily hopping on that train, too.

With the weather getting cooler and our schedules getting busier, I love having a few quick, comforting meals in my back pocket. This Easy Potsticker Soup s one of those meals that feels like it took way more effort than it actually did. Savory broth, tender mushrooms, aromatics, and frozen potstickers come together in one pot for an easy, comforting meal that’s ready in about 30 minutes.

Ingredients

  • 2 tbsp sesame oil or olive oil

  • 1 large shallot, thinly sliced

  • 2 garlic cloves, thinly sliced

  • 1½ tbsp fresh ginger, peeled and grated, or ¼ tsp ground ginger

  • 1 tsp brown sugar

  • 5 oz shiitake mushrooms, sliced

  • 1½ tbsp soy sauce, plus more to taste

  • 2 cups low-sodium chicken stock, preferably bone broth

  • 1 cup water

  • 8 oz frozen potstickers or wontons — chicken, pork, or vegetable all work

  • ¼ cup scallions, chopped

  • Chili crisp, for serving (optional)

Instructions

  1. Sauté the aromatics.
Heat the oil in a large pot over medium heat. Once the oil is shimmering, add the shallot and sauté for 4–6 minutes, or until softened and lightly golden.

  2. Build the flavor.
Add the garlic, ginger, brown sugar, and sliced mushrooms. Cook for another 2–3 minutes, stirring occasionally, until the garlic and ginger are fragrant and the mushrooms begin to soften.

  3. Make the broth.
Add the soy sauce and stir, scraping up any flavorful bits from the bottom of the pot. Pour in the chicken stock and water, then bring the soup to a gentle boil.

  4. Add the potstickers.
Carefully add the frozen potstickers or wontons directly to the simmering broth. Cook according to the package directions, usually about 2–3 minutes, or until heated through and tender.

  5. Finish and serve.
Remove the pot from the heat and stir in the scallions. Taste and add more soy sauce if needed.

Ladle into bowls and finish with a spoonful of chili crisp for a little heat and extra flavor, if desired.

From Scratch Tip:
Keep a bag of frozen potstickers in the freezer and you've always got the makings of an easy, comforting dinner. Swap in whatever mushrooms you have on hand, and add a handful of spinach or bok choy at the end if you want to sneak in a few extra veggies.
