Caribbean Mule

I love a good Moscow Mule. There’s just something so refreshing about that crisp, gingery bite from the ginger beer. This month, I’m putting a Caribbean spin on the classic and sharing my Caribbean Mule!

The biggest difference between this and a traditional Moscow Mule is swapping the vodka for white rum, then adding blue curaçao and pineapple juice. My husband and I made these for one of our family movie nights, which happened to have a Caribbean theme, and they were the perfect addition to the menu.

And the best part? This can easily be made into a non-alcoholic drink so the kiddos can join in, too! Simply leave out the white rum and use a non-alcoholic blue curaçao mixer instead. It turns the prettiest shade of blue, just like the ocean, and makes this drink feel extra fun.

Unfortunately, we gulped these down so quickly that I completely forgot to take a picture. But just know: if it tastes good and it’s blue, you’ve done a great job. No photo needed!

Ingredients

  • 2 oz white rum

  • 1 oz pineapple juice

  • 1-2 oz blue curacao

  • Lime juice

  • Ginger beer

  • Ice

Directions

  • In a copper mug or glass, pour in white rum, pineaaple juice, blue curacao, & lime juice.

  • Stir, add ice, and top with ginger beer. Enjoy!
