Family Movie Night: Soul
A Soulful Brunch (well…dinner)
This Friday, we decided to flip the script, literally, and do breakfast for dinner. Because why not? Who decided waffles had a morning-only curfew anyway?
Our theme was Soul, not just the kind you feel deep in your bones (though trust, there was plenty of that too). We cozied up with Disney Pixar’s Soul, which had us laughing, crying, and doing a little late-night life inventory in the best way possible.
And of course, no soulful night is complete without a spread that feeds the belly and the spirit. Here’s what was on our Soulful Brunch Menu:
✨ Joe’s Chicken & Waffles – crispy, golden chicken paired with fluffy buttermilk waffles, the duo that proves opposites definitely attract.
🥓 Jazzy Breakfast Munchies – eggs, bacon, and all the breakfast classics, because some things never go out of style.
🍫 22’s Two-Bite Brownies – fudgy little rounds of chocolatey joy (from HEB), small enough to “just have one more”… but let’s be real, you’ll need three.
🥂 Soulful Mimosa & Juice Bar – bubbles for the grown-ups, fresh juice for the littles, and mocktails for anyone who likes their fancy glass sans fizz.
This Friday night wasn’t loud or complicated—it was warm, cozy, and just what our souls needed. We laughed at the movie, lingered over extra helpings of waffles, and found ourselves savoring the little things. Like syrup dripping down a buttery bite at 7 p.m. Or watching your kiddo get totally wrapped up in a story that makes you both feel something real.

✨ Bonus Recipe: Buttermilk Waffles
Because honestly, the waffles deserve their own spotlight.
Ingredients
1 1⁄2 cups all-purpose flour
1⁄4 cup cornstarch
1 teaspoon salt
1⁄2 teaspoon baking soda
1⁄2 teaspoon baking powder
1 large egg, lightly beaten
1⁄3 cup granulated sugar
2 tablespoons unsalted, softened butter (plus more for serving)
2 tablespoons vegetable shortening, softened
3⁄4 teaspoon vanilla extract
3⁄4 cup whole milk
1⁄2 cup half-and-half
1⁄2 cup whole buttermilk
Cooking spray
Maple syrup, for serving
Instructions
In a bowl, sift and stir together flour, cornstarch, salt, baking soda, and baking powder. Set aside.
In a large bowl, whisk together egg, sugar, butter, shortening, and vanilla, until well combined. Mix in whole milk, half-and-half, and buttermilk until smooth.
Gradually pour the dry ingredients into the egg mixture. Gently stir with a rubber spatula until combined (a few small lumps are totally fine).
Preheat a waffle iron according to instructions and grease with cooking spray. Spoon 1/2 cup of batter into the waffle iron and cook for about 4–6 minutes, or until golden brown and crispy.
Serve hot with a pat of butter and a drizzle of maple syrup. Enjoy! 🧇✨
