Bougie Kid Eats: Strawberry Lemon ‘Sicles

Welcome back to our Bougie Kid Eats series.


Today’s feature? Strawberry Lemon ‘Sicles, or as AG used to call them when she was little, “Lemon ‘Sicles.” Just in time for that hot (and wildly humid) Texas summer.

Now, AG has always had a deep, citrusy love affair with lemons. If I let her, she’d peel and eat them like oranges, no hesitation, no squinting. Tart is her jam, which is why she’s been known to drizzle fresh lemon juice over everything from pasta to her now-iconic avocado toast. So naturally, lemon popsicles were an early favorite.

As her palate grew, though, she discovered that strawberries and lemons are kind of a dream team. The sweetness of ripe strawberries softens that bold lemon tang, creating the perfect balance of sweet and zingy in every bite.

These little frozen gems are bright, refreshing, and made with just a handful of simple ingredients. Bonus? They’re incredibly easy to whip up and a total hit with both bougie kiddos and grownups looking for a light, fruity treat to survive a Texas summer.

🍓AG’s Strawberry Lemon ‘Sicles🍋

Ingredients:

  • 3 ½ cups of fresh or frozen strawberries (thawed if frozen)

  • ½ cup fresh lemon juice (about 2-3 lemons)

  • ¾ cups water

  • 2-3 tbsp sugar, honey, or agave

  • Optional: zest of 1 lemon

Directions:

  1. In a blender, place strawberries, lemon juice,  water, and sugar, and puree until smooth

  2. Add in the lemon zest if you’re feeling fancy.

  3. Pour the mixture into popsicle molds (a funnel is helpful)

  4. Freeze for 3-4 hours or until fully set.

Pro tip: If your kiddo is adventurous like AG, toss in a few thin lemon slices before freezing for a little extra sparkle. Or swap half the water for coconut water for a slightly tropical twist!
